  • 4 tomatoes
  • 1 cucumber
  • 2 shallots
  • 3 tablespoons olive oil
  • lemon juice
  • 1 bunch of parsley
  • 1 bouquet  fresh mint (~15 leaves)

    1. In a salad bowl, pour the couscous and cover it with the same volume of boiling water. Let it rest for 30 minutes, stirring with a fork from time to time.

     

    2. Wash the tomatoes and cucumber, deseed  and cut them into small cubes.

     

    3. Finely chop the shallots. Finely chop the parsley and mint leaves, adjusting the amount to your taste. 

     

    4. Add the vegetables, herbs, olive oil, and lemon juice to the couscous salad bowl and mix. Salt and pepper.

     

    5. Let rest for two hours in the refrigerator before serving.  Enjoy.
