  • 1 bag baby spinach shoots (~100g)
  • 500g cherry tomatoes
  • 1 melon
  • 12 slices Parma ham
  • 250g mozzarella
  • 1 red onion
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons balsamic velvet
  • 1 bunch fresh chives
  • salt and pepper

    1. Wash and spin-dry the baby spinach.

     

    2. Cut the melon in half, remove the seeds and cut into small cubes.

     

    3. Peel and finely chop the onion.

     

    4. Cut the cherry tomatoes in 2, dice the mozzarella and chop the chives.

     

    5. In a salad bowl, prepare the vinaigrette with the olive oil, vinegar, salt and pepper. Add the spinach shoots, onion, tomatoes and garlic.  the chives and mix well.

     

    6. Arrange this salad base on separate plates and top with diced melon, mozzarella and 3 slices of rolled Parma ham.

     

    7. Drizzle with half a tablespoon of balsamic velvet, and enjoy!
