  • 2 tablespoons olive oil
  • 1 tablespoon wine vinegar
  • 1 teaspoon mustard

    2.  In a skillet, sauté the bacon slices until crispy and chop them into pieces.

     

    3.  Wash the cherry tomatoes and quarter them. Finely chop the shallot.

     

    4.  In a salad bowl, whisk together the vinegar, salt, oil, and mustard. Add the lentils, shallots, and tomatoes, then the bacon and chopped chives. Mix to distribute the dressing evenly. Adjust seasoning if necessary.

     

    5.  Let rest for 1 hour in the refrigerator. Enjoy.
